Hong Kong style fried noodles [moved from Site Talk]

I've seen various versions of this dish, but they don't duplicate the dish I had in Hong Kong in 1989. At The Red Pepper restaurant, we were served a dish that was a block or pile of thin noodles. The server poured a hot red sauce over the noodles and they sizzled as he did this. Does anyone know what this dish is called and how to get the recipe?
