Hong Kong Dim Sum at 8 or 9am on a Monday morning?

Hello Chowhounds,,
I have two long layovers in HK this summer on my way from sfo-del and back, and once again, I hope to eat some amazing food.

Last time you steered me to Fu Sing, where I had the most amazing pork-fest in the universe- steamed pork buns, bo lo pork buns, and of course, a plate of the amazing cha siu. They also brought out an amazing pomelo mango cream dessert at the end- it was glorious!
Now, I am thinking of a return visit, but I have a busy day planned, and I arrive to the city quite early, and they don't open until 11am.
Do you have any suggestions of where I can have a similarly spectacular dim sum pork fest at 8am? (I feel gluttonous just typing 8am pork fest!)
I don't speak a lick of Cantonese or mandarin, so that may be an issue where some places are concerned. And while I love a good whole in the wall, in June and August, I'd love some AC.

My other request is for a good boiled pork and chive dumpling, more northern style I know...but there must be a tasty spot in HK? Any that open in the morning? Or else I could grab a late bite there before I catch my flight...

And one more-- is there a sichuan place that I could work with to put together a tasting menu for 1 for a lunch or dinner in August?
