[Hong Kong] One day gastronomic itinerary

Arrive on a Friday night to HKG at 10.30 pm and fly out on Sunday at 11 am.

That leaves us with one full day to stuff ourselves as much as humanly possible.

We're both "low end" food lovers. We love real working class authentic dishes. Not big on Michelin star places (nor are they in our budget; though we're not against 'em so if they're a good value go ahead and suggest away!). Think diners, dive bars and mexican food in America; street food and bia hoi in Vietnam. We're more of a "down n dirty" style, the grimier the better though we can clean up if necessary :)

That being said, I'm hoping the Chowhound community can help me plan a full day food crawl. We still haven't booked a room so any suggestions for positioning ourselves well will be gladly accepted as well!

We really want to try:

Chinese preserved meats/charcuterie/jerky (we live in Spain and are BIG On cured meats)

An authentic old school Cha chaan teng... at least for some tea/coffee

Cheung Fun

Some dai pai dong or similar "critically endangered" eating experiences

Some "authentic" hawthorne sweet & sour pork

Siu Mei: BBQ pork and roast goose

Other things we'd be interested in trying: snake soup (is it worth it?) or hot & sour soup; garlic crab; brisket, pork cheek/cheese sauce

And any and all other items you may recommend!

We don't have a set budget, but the lower we can keep it, the better.
