i was going to take a crack at making homemade sicilian style sausage and i wanted to flavor it with fennel seeds - anyone have experience doing this ? did you toast the seeds before you put them in the mixture ? what's the ratio of seeds to meat - i was thinking 2-3 tablespoons / pound of meat - is that too much...too little ?
