How long would you say homemade salted caramel sauce will last (refrigerated). I keep seeing blogs w/ recipes saying only 2 weeks - that seems short to me (but I have no idea!).
The recipe I used called for 1 c sugar, 1/4 c heavy cream, 6 T butter. I also added 3 T whiskey.
I'm guessing the short shelf life is due to the heavy cream... but with the addition of the alcohol, do you think it will last longer?
Also, what's a sign it's turned (taste alone?). I have a jar I recently made that I can use to experiment with shelf life.
I want to make this for holiday gifts and would like to tell people how long it's good til and/or know how much wiggle room I'd have to make it ahead of time.
I found this old post which implies a couple months of shelf life: http://chowhound.chow.com/topics/283756
