I was at Leener's today (see link below) picking up bottles and corks to fill with some limoncello I'm making for the holidays. I was offered a sample of some home-brewed root beer. This stuff had a good flavor, but had very rough carbonation and foam.I thought my cheeks were going to explode from one reasonable sip. I asked how one gets a soft, velvety foam with gentle and smooth carbonation but was not able to get an answer. Has anyone had experience with making a rootbeer with the qualities I'm seeking? I think I would enjoy experimenting with aromatic flavors, but I really want the end product to have amazing texture and body as well as taste.
