A fellow London hound has kindly lent me an ice cream maker, and I'm having lots of fun. I especially would like to try different wine & spirits combinations for refreshing summer drinks (I have loads of liqueurs that were given as gifts or bought for the one-hit-wonder that will otherwise just sit around forever, but I think this may be a good use for them!) but I am under the impression that various things will not freeze well, and that the addition of sugar (sugar syrup seems to be the root of all ices) lowers the freezing temperature yet more. I'm happy with a 'slushy' texture, but ultimately want something more solid than liquid. Any suggestions? I'm thinking of making, for example, kir royale ices (champagne, creme de cassis...)
