For cooking with total control of heat behavior, I was wondering what would be the preferred heat source for your "cook-top" appliances. In general, I dislike electric as you can not control temperature levels consistently and make rapid adjustments to keep your items "cooking" correctly. I have become very happy using our gas (propane) stove and love the ability to control the flame to keep the heat near the correct level. But lately, I have picked up and used a good quality induction counter top unit and love how easy it is to use and how quick it responds to heat demands. I have "tested" boiling time in equal pans for water on gas (home stove top) and induction (counter unit), and the induction unit won each time. You accurately set the temperature with the induction.
