Home Cooking Challenge: Theme Ingredient Celery

I admit I bought an entire bunch of celery just to make the braise base for a pot roast. I would normally use celeriac simply because I like the flavour and texture far more, but alas, there wasn't any. Now I must find a way to use up the rest of the celery. I don't like eating celery, cooked and especially raw, but I do like a little bit in my chicken/cashew stir-fries.

Open to any tasty recipes using LOTS of celery (and bonus points for incorporating carrots too).
