I've recently begun dating a vegan and am going to cook my first meal for her. I'd like to make something sort of elegant, not too heavy on tofu/tempeh type dishes. I'm thinking about building the meal around a salad: kale, apple, fennel, pomegranate seeds, avocado, pistachio nuts. Possibly a pasta? I know she likes Italian, but it's hard for me to imagine enjoy pasta without parmesan. I'm open to ditching the salad if folks have other thoughts. Any suggestions appreciated!
