Hog butchery at home?

Not sure if i am posting in the correct place, but i am looking to buy a pig and butcher it at home.

Our kitchen has a large granite island - which will make a great workspace, however i am worried about damaging it with a saw. I was thinking of covering it with a large sheet of plywood just to make my initial saw cuts and break the carcass.

I have read that ply wood contains formaldehyde and am worried this could poison us.

Any info or any tips from previous experience would be great!

I am also looking to buy a grinder this weekend and any recommendations would be greatly appreciated.
