Next high end meal

Okay, so living in L.A. and reading chowhound lends a certain frustration, something along the lines of, "WHY, IN ALL JUSTICE, ON GOD'S GREEN EARTH, AM I NOT ALLOWED TO EAT AT SPAGO/WATER GRILL/JOSIE EVERY DAY?!" The answer of course, is I don't work downtown. The bright side is every few months or so I manage to save up enough to enjoy one of the "high-end" places. So where next? This is russkar's perfect request I suppose, I have never been to: Spago, Josie, Lucques, Valentino, and many other hot spots. (Last experience was Water Grill, pretty amazing). Keeping in mind that I get to splurge only several times a year, where should I go next and why? Also keep in mind that we're after tasting menus, wine pairings, the whole nine yards. At this point, I'm leaning toward Spago, even though I swore I'd never eat there and support Sata...err I mean Wolfgang.
