Helpful Input re: 48" Prof. Range

Hi everyone,
Starting the process of selecting a 48" gas range. It's been a whirlwind, to say the least! I really didn't have any pre-conceived ideas of what I wanted and after visiting appliance stores, am just as confused!
One thing that surprised me was lack of self-cleaning feature for the ovens. I guess in this "higher echelon" of cooking, it isn't such a big deal. So after having a self-cleaning electric oven for years, switching to an all-gas non self-cleaning oven is taking some getting used to.
How do you find cleaning the ovens to be? Since we're going with a 48", will have 2 ovens.
Did see that Monogram and Thermador offer self-cleaning ovens in all-gas, but wondering if we're losing out on a more reliable brand by wanting the self-cleaning feature?
We're a family of 3, more when entertaining. Right now, I use the Clean cycle on our oven every month, since homemade pizza and roasted meats seem to gunk up the oven.
