I picked up a great batch of carnitas Michoacan last night for dinner. It was more than we needed, and I ate the rest tonight.
Is there a good way to re-heat carnitas without drying out the meat/making it too greasy? I used the microwave thinking that would be less harsh, but it still got a bit worked over. Is this something inherent in the dish. Anyway, if possible, it would help on the second day.
