I have very fond memories of an Italian (?) sheep's milk cheese called Lachesos and have been trying, unsuccessfully, to find it. Google produces several hits, all from the 1990s, which is when I bought it in Chicago and ate with my wife the night before our wedding. I've tried a variety of spellings, all to no avail. Name produces a blank stare from the cheesemonger at whole foods. Even if the cheese is unavailable, which certainly seems to be the case, I'm curious what became of it.
