I have been searching for weeks for some really healthy cookie recipes and I am coming up with nothing! I have been buying the yummiest cookies at my Farmer's market with peanut butter, flax seed, oatmeal and chocolate chips and I would love to recreate something like that for my kids (and since I'm 8 months pregnant, I'd like to think that I'm eating something extra nutritious!)
Can anyone give me a good recipe or two for some cookies (or even muffins) that pack a lot of nutrition in them? My pantry is full of soy flour, oat and wheat bran, flax seeds...you name it. But I need help putting it all together! However, I don't use any sugar substitutes like Splenda, so skip recipes that call for that...
Even a good cookbook recommendation would help.
