I'm a painting contractor so I work all over the place. Usually I have access to a microwave but not always. I'm also single so usually I do the "cooking for one" thing, unless I'm having a get-together or sharing or going out to eat. I MUST eat during the day, but try to avoid fast and overly-processed food. But sometimes I'm running from one job to another and driving through a fast-food joint is a fast and easy way to refuel, but I always feel like crap afterwards.
Sometimes I make something for dinner that re-heats great for lunch the next day. Like lentil or some other sort of soup, or frittata, or latkes, or curried vegetables. Or I'll stuff some hummus and naan bread in my cooler, but that doesn't really sustain me. I'm busy and physically active and get cranky and tired if I don't get my protein and good fat.
But too often I find myself running off to the nearest burger joint for lunch, or spending way too much money at a nearby deli for a healthful salad of some sort. PB&J sandwiches and a piece of fruit is an easy and economical solution, but boring!
