Got a head of just-picked elephant garlic at my local farmer's market this morning. I got it home and realized I don't really know what to do with it. The head of the garlic looks to be full size, so I would not use it as I normally would use green garlic with a tiny head and a long green stem. This just dosen't seem to have the dried out papery skin of regular elephant garlic. Do I use it as I would normal garlic or more like "green" garlic?
