Hatch Chiles?

I have a lot of roasted hatch chiles in the freezer. Half are hot, and half are mild. I want to use them up so I thought of making somekind of chile verde. I would like to be able to add chicken to it or be able to freeze it and use it for other uses. Does anyone have any good, easy recipes for chile verde, or have any other ideas to use up the chiles. TIA
