just wanted to say that if you're out looking for an Easter ham - traditional for many Cdn families at this time of year - I highly recommend Hertel brand from Port Alberni BC
it is smoky but not too salty
for a large bone-in ham you'd be approx. 40 dollars and better (more)
cottage ham (no bone) is about 15 dollars at our greater Vcvr IGA.
we usually simmer (NOT boil) the cottage ham - chill, skim and reserve the stock for some pea soup - then slice up the ham - we don't use it all at once - so I freeze it and it's great for either egg breakfast or quiche or sandwiches etc
ps - I am going to try to make one of our traditional Alberta Easter dishes - Paska - see the Mennonite Girls Can Cook recipe (Abbotsford BC - Lepps Farm Mkt) ----- and some borscht (we make vegetarian version) - and we already made the traditional Chinese Cdn decorated hard boiled eggs - you know I'm making light of our typical BC multi-family here.
