My DH and I love, and I mean love, good fish n chips and it is extremely difficult to find in our area. So, today I made it at home, and it was awful!!
I used cod and made my batter with egg, beer, flour and seasoning. The batter was beautifully brown and crisp as it came out of the fryer, but within a minute it be came soggy and was almost inedible, but the fish was perfectly done. I'm at a loss.
I even made some onion rings with the batter, and they turned out perfectly!
So what happened? What did I do wrong? Any help is greatly appreciated.
