Exactly where does this cut of meat come from? Delicious, elusive, and hard to come by. Any local sources? OC especially but do travel around the SoWest alot. So really my question would be, when I go to a butcher, he looks at me quizzidly, I can tell him in specific terms, his terms, where to slice from that side of beef. Is it called different names?
