Hi all, going to Hamburg for three days only for eating / drinking good wine. Would really want recommendations for dinner experiences in Hamburg. Overall we want laidback restaurants, but with great food and a rich wine list. Much like Katla/ Pjoltergeist in Oslo, 108 in Copenhagen or Sansho in Prague. Do you have any recommendations? To be more specific we are looking for:

- Really good asian not serving only sushi with rich wine list (can be fine dining but laid back)
- Great italian with rich wine list
- Some kind of fusion or unique restaurant serving several dishes with rich wine list.

Also, with basis in the above I hope someone catches what we are looking for and recommendate something totally unexpected, but great.
