Haemul Pajeon - soaking up oil

Made haemul pajeon last night. It tastes fine, but I noticed it soaked up every bit of the oil it was pan fried in. It was plenty hot when I added the batter. Used the recipe from Korean Made Simple.

Any ideas, or is this just how it is?
