Guidelines for Freezing Food?

My husband and I are expecting our first baby early next year. In preparation for the big event, I've been thinking about cooking and freezing things to get us through the first few months in tasty style. I cook a lot, but generally only make enough for two. Thus, I have no idea what freezes well, what doesn't, etc. I've been thinking about making several different soups, tomato sauce that we can put on pasta, some Indian dishes like dal, polenta lasagne, etc. Any thoughts on things that do or do not freeze particularly well?

Also, I'm not sure when I should start freezing things. How long do things keep in the freezer?
