I may be late to the party on this one, but for those of you in search of guanciale - fatty pig jowl that's a key ingredient in classic Italian amatriciana sauce - they've got it at DiBruno in the Italian Market. It's from high-end producer Niman Ranch of California.

Didn't get any yet, but next visit.
