Anybody know where I can get this stuff? For those scratching their heads, it is dried meat from a hog's jowls. I've had it in a few great dishes in chow-worthy Italian places around town. But even in some of the better delis do not seem to have it in stock. Suggestions? Or should I just use pancetta instead?
