After sampling grouper cheeks for the first time, at the superb ALTER, I would like to try making them at home. I'm not the biggest grouper fan (I like some other local fish better) but, as anyone who has sampled the cheeks can attest, they are pretty fabulous...a texture similar to lobster but a taste that is even better.
Of course I will never come close to the stupendous dish at Alter, but want to try making them at home. I've found frozen grouper cheeks online, but wonder if any of you have spotted fresh ones them for sale at a fish market? (preferably in Palm Beach County but I would travel) Is there a local season for grouper? Many thanks!
