Ground Beef Question (solved)

I have a strange question, but let me explain first what I'm trying to do. We are in a small RV and I want to make the linked recipe, reduced by half. I always buy lean ground beef, but the husband brought back the regular fat ground beef. I'm worried that when I make this, the fat will overfill our pan.

My question is, what can I do to prevent that? I cannot buy a rack for the cookie sheet because it's a special RV cookie sheet and no one in this little town will carry the right size.

I really hope someone will have a genius suggestion. There are so many geniuses here that I count them all! Many thanks in advance for any suggestion.
