The long-awaited (at least for us) Grimaldi's on Franklin Ave., in GC opens Weds. We stopped in last night just to check it out and we were graciously told we could eat at the bar if we liked, as the wait staff was not in place. Right behind us were about 10 others looking to do the same.

The crust is paper thin, with just the right amount of charcoal flavor, cooked to perfection, and most importantly, not burned on the bottom.

The only issue for some possibly (not for us), is that the toppings tend to make the pizza slightly runny it seems. We had anchovies only and in fact, they discourage from choosing more than 2 toppings for just this reason.

Just the right amount of cheese (the cheese had excl. flavor) and sauce on the pie as well. Not too much.

The antispasto plate was excellent also, superb oven roasted red peppers w/ garlic especially.
