Next week I'm preparing a grilled dinner for friends. The main will be whole grilled fish (4 single serving sized snappers). Seasoning for the fish is just (usually) salt and pepper and a brush of olive oil. One of the sides will be grilled corn, which I'll brush with butter/garlic/cayenne sauce and grated parm.

Desert will be grilled mango and pear slices (cooled and undressed) with a few squares of chocolate.

The question - salad. I'd really like to do a vinaigrette dressed grilled romaine. The recipe calls for crumbled bacon and bleu cheese sprinkled over the lettuce. But I'm having second thoughts wondering if the bacon and bleu cheese will overwhelm the fish and/or clash with the parm on the corn?

Thoughts to share, anyone?

ps - white wine will be on the table, if it makes any difference
