Green onions and other fresh spices are just annoying. Recipes call for them in generally small quantities and supermarkets sell them in not small quantities. As a cook for myself and/or a small family there just seems to be no way to acquire these ingredients and not waste more than half of it. Specifically, with green onions I will use it in, say, mabodofu. That might use four or five onions, then I will cut up the rest of the bundle on the theory that I will use it in eggs or something. Which does sometimes really happen. But eventually, a week or two later, I clean out the fridge and throw out a handful of rotting green onion that I felt so frugal in chopping up.
I really think about, you know, planning how to make use of a whole bunch of green onions that I bought, say, for making green onion pancakes. But that is just a little insanely obsessive.
Why can’t the supermarket sell me three or four green onions for a quarter instead of a bunch for a dollar? It seems like they would make more money selling it this way to people like me and I would feel better not throwing away stuff I could not use.
