Green bits in banana bread - WHAT went wrong?

I made banana bread today and the only thing I changed is I added sunflower seeds and unsweetened coconut (which I lightly roasted before incorporating to the dry ingredients, and then into the wet ingredients).

The recipe contained the following: unbleached white flour, baking soda, baking powder, salt, sugar, grapeseed oil, very ripe bananas, fat-free, unsweetened vanilla-flavoured yogurt, vanilla extract, and the sunflower seeds and coconut.

A few hours later, when I cut a slice of bread, I saw little green bits (they looked like zucchini skin). The bread tastes fine, I don't think it's posing a health hazard to eat it, but I'm curious to know what happened... any ideas???
