Last month's visit to included shopping at the Saturday morning Portland Farmers Market at PSU for ingredients to make dinner for some friends. https://www.chowhound.com/post/olympi... We scored these very fine filet beans, as well as some summer squash. My chow pal traveling companion had half a pastrami and cheese sandwich leftover from lunch the previous day.

She pulled the pastrami out of the sandwich. Then she cubed the bread that had melted cheese stuck to it and pan-fried them until they were crunchy, cheese croutons. The summer squash was seared on the grill then cut into chunks. She stir-fried the green beans, then combined with the squash and used the strips of pastrami to flavor the dish.

A delicious and impressive side dish!
