Great venison dish at Cav

We stopped by CAV last night as they were doing an Alsatian flight this week, and one of the new menu items was venison chops with spaetzle and red cabbage. This was one of the best renditions I've ever had -- the cabbage wasn't as strongly sweetened and spiced as some, the venison (2 chops in the full order) was tender and rare, and the spaetzle was sauteed with some currants. Beautiful match with the grand cru vineyard pinot gris they were serving. Hope they keep this on the menu for a while, as it's definitely worth an encore meal.
