Who Has a Great Creamed Spinach Recipe?

I was thinking of making creamed spinach to go with my prime rib this Christmas, but it's actually something I've never made before. I went to my go-to site, Serious Eats, to see what Kenji had for recipes, and he cooks the spinach down for an hour and a half (https://www.seriouseats.com/recipes/2...). I'm still considering it, but it just seems like a lot of "watch and stir" time when family is over.
I do make a "creamed" spinach recipe that isn't really creamed at all. It came from a Blue Apron recipe I received a few years ago and loved it so much I put it into our regular side dish rotation. For that recipe you saute baby spinach until wilted, drain and squeeze out water, chop, then add to a pan with butter, garlic, crushed red pepper, parmesan cheese, and a little water. It's by no means a true creamed spinach, but still gets a creamy texture from the cheese and water, and tons of flavor from the cheese, garlic and crushed red pepper.
