Thanks to everyone who gave marmalade advice last week. I finally got around to canning my grapefruit today, and so far so good! I'll do a final extensive report in two weeks if everything goes according to plan. For now, a pretty photo:
I have to say, it was easy but not easy at the same time. None of the techniques were difficult, but I ended up with a lot of dirty pots and sticky stuff over most of my counters. I know, it was my first time, but canning is no one-pot quick kitchen activity!
But grapefruit marmalade smells and looks MUCH prettier than orange marmalade. I can't wait! The bits I licked off the spoon were very tasty. I'm only worried about whether I got a proper seal on the cans (I'm pretty sure I did) and whether it'll set up to the right texture. Fingers crossed!
