Granola - yet another recipe

I made that granola recipe last summer in preparation for a camping trip. It is called "deluxe" and it is true to its name. Very filling and easy to make. From a book on outdoors cooking called La gastronomie plein air (Odile Dumais) --> great reference book, by the way.

3 cups large oat flakes (I use a mix of oats, barley and rye, in variable proportions, depending on what I have on hand)
1/4 cup wheat germ
1/2 cup sunflower seeds
1/4 cup sesame seeds
1/2 cup unsweetened coconut flakes
1/2 cup coarsely chopped almonds
1/4 cup wheat or oat bran
1/4 cup coarsely chopped walnuts
1/4 cup raisins
1/4 cup finely chopped dates
1/4 cup dried banana chips, crushed
1/4 cup dried cranberries
1/4 cup + 2 tbsp peanut oil
1/4 cup + 2 tbsp honey
1/2 tsp vanilla

In a large bowl, mix dry ingredients except for fruits. In a small pot, warm up the oil and honey, so that honey and oil bind together; add vanilla. Pour onto dry ingredients and stir to coat all the dry ingredients. Spread the mixture on a greased cookie sheet and bake at 280F about 30 minutes, stirring occasionally so that the granola roasts evenly. Remove from the oven and add the fruit. Cool completely and keep in an airtight container.

Yields 10-2/3 cup servings
