When my grandma died 10 years ago, she took her recipe for latkes to the grave with her. They were different from most other potato pancakes I have had in that they were small and very crispy on the outside and sort of bulgy, not flat. I know she used a cheese grater for the potatoes and onions, I know there was a heck of a lot of oil splattering all over the kitchen from a cast iron skillet. I am pretty sure the flour was matzah flour. The outside texture was fairly homogenous, not like the obvious grated appearance of most latkes. There were eggs in there somewhere too.
