I recently stopped by my favorite Hispanic grocery store (Phoenix Ranch Market, in Phoenix AZ) with a craving for jamaica, the delicious agua fresca made with hibiscus leaves. I now have about a pound of jamaica flowers sitting in my kitchen. I was looking through various recipes online, and noticed that now two recipes are quite the same. I tried out a couple of them, and nothing has been *quite* what I've been looking for... the first was so strong it almost peeled my eyebrows back, the next was nearly flavorless. While it may be fun to go the Cook's Illustrated route and test every possible variant of the recipe until I find an absolutely perfect jamaica, it would be much easier to ask all of you if you have a reliable recipe for jamaica.
