Do you have a good corn & red pepper recipe?

I had lunch at the Aria buffet in Las Vegas the other day, and had a dish I hadn't had in so long, I forgot how much I liked it. Basically I had mac&cheese with a slightly creamy corn & red pepper dish. Now, I make a really, really good mac & cheese (Aria's was just passable). But I've been eating it all these years with straight up corn & butter. Now I remember what I've been missing.

There's no shortage of recipes out there, I'm just hoping to save some trial and error. Does anybody have a tried & true favorite they can share? What I had at the Aria had some cream/milk in it, but not enough to call it creamed corn. It had red peppers of course. Maybe some onion, or just onion powder perhaps. It wasn't spicy, just a really balanced pepper flavor.
