I'm looking for a good version of green onion pancakes. Taiwan Restaurant in Berkeley has them on weekends, but they are often pale, which tells me they haven't cooked long enough, and greasy, which tells me the oil's probably not hot enough. I tried asking for well done, but that didn't make much difference. When they are well browned and not too thick, so that they are crusty and chewy, they are absolutely delectable. Unfortunately it's been a while since I had such a rendition.
I believe they are a northern Chinese specialty, and on Taiwan because that's where the Nationalists fled to, bringing their cuisine, however am not expert in Chinese regional cuisines.
