As I've started eating gluten-free (AND dariy-free), I've explored the world of baking a bit, but I have to admit, it's difficult baking g-free and d-free! What are your favorite g-free flours to bake with and their uses?
I've found almond meal makes great muffins and I just found this awesome paleo crusty bread recipe that uses tapioca flour & almond meal. http://cookituppaleo.com/paleo-crusty.... It's so good. I've also made a raw cookie with almond meal. I've used coconut flour, but find it makes things dry & cakey. I've used it for cooking (coating chicken and thickening).
I purchased a buckwheat pancake & waffle mix from vitacost and subbed out the dairy products and sugars for less sweet versions and non-dairy milk and found them to be just delicious.
I don't really like the all-purpose flours-- any recommendations? Would love to hear your thoughts and opinions on different flours you've tried.
