Ginger turned blue in the freezer?

nothingswrong | Feb 23, 201506:52 PM

I regularly freeze my ginger knobs since I can't go through them fast enough. Stuck a few in the freezer a couple weeks ago in a rush and didn't put them in a Ziploc like I usually do.

Tonight pulled one out and peeled it for a stir fry and it was BLUE inside. The photos really don't do the colors justice. It is quite saturated. I kept peeling and peeling but it was blue almost all the way through.

Anyone have any idea what this is? Smelled fine, didn't end up using it, but just curious.
