Ginger - Futurologists Take Note

I have diced fresh ginger into small bits.

Packed a Ball jar full - and then continously poured in honey.

It was evenutally all filled - the solution was watery in the end - as the honey no doubt drew water out of the fresh ginger.

I sealed the jar and put in the fridge.

So - futurologists - what's going to be the result? Green-blue mold in xx weeks/months? - or preserved ginger that one can use for a long time?
