Just got back from Italy. One of the highlights of our trip was a private cooking class that my DH and I took at Giglio Cooking School in Florence.
I contacted the owner/chef, Marcella Ansaldo by email and she sent me a list of hundreds of dishes to choose to make. I knew we wanted to learn to make fresh pasta and Marcella helped me choose 4 dishes that we knew we'd love.
The cooking school is a short walk from the center of Florence. This is a professional kitchen along with a a dining area to enjoy your creations along with wonderful wine.
Marcella had done all of the shopping and we were completely hands on in making 3 types of pasta and then 4 sauces. My favorite being a lamb ragu. We also made a wonderful shrimp and zucchini sauce. The secret....using shrimp with the heads on and cooking them ever so briefly in white wine.
After lots of sightseeing it was truly wonderful to have a half day devoted to cooking. Marcella is absolutely lovely and it was wonderful to be able to talk to her about Italian cooking and life in Italy. As soon as we got back, my husband ordered a pasta machine!
