So I put together the Gateau aux Marrons that J. Reynolds wrote about in the ny times on 12/22. It had no sugar or flour in it. Can this be? Has anyone else made it or tasted it? I am planning on bringing it to a dinner party tomorrow night so I haven't tasted it yet.
Do "traditional" gateau's have no sugar/flour? Are traditional ones made with pureed chestnuts?
