I've never made ganache before, but I found a recipe (http://www.epicurious.com/recipes/rec...) for vanilla cookie and some suggestions were to make sanwiches out of them using ganache.
One recipe I found called for dark chocolate, presumably from a large block...I am wondering- can I use milk chocolate or white chocolate instead? If so, should I make any changes to the amount of cream I add (1.5 cups of cream to 1lb of chocolate).
Also, can ganache be made with milk (whole or otherwise?)
