Just back from a week in Costa Rica, where my teenage son became addicted to gallo pinto (black beans with rice). Since I've spent most of his 18 years trying to find a breakfast food he likes (other than pancakes and waffles), now I have to figure out how to make gallo pinto. Is it as simple as leftover rice with black beans and some onions and chopped peppers? Any spices or sauces added?
