Ive been doing a few fair/festivals with my bbq trailer, with some success. I am learning tons, and have much still to learn. Here in Texas funnel cakes are very popular at fairs- a deep fried pancake type batter that is dusted heavily with powdered sugar. It has a huge profit margin because they are so cheap to make. I, however, do not have a huge deep fryer in my trailer, nor do I want one. I accepted yesterday that a large Fry Daddy is not sufficient for funnel cakes at fairs due to fair volume, and the poor heat maintenance of small fryers.
Im trying to think of an alternative to funnel cakes- preferably something with a comparable profit margin that does not need to be fried.
